Use a cheese grater to grate polenta. Add to a medium sauce pan along with garlic, bay leaf, bouillon, water, and plant-based butter. Bring to a boil. Then, reduce heat and simmer for 10 minutes, stirring regularly,
Meanwhile, cook chorizo according to package directions. ~5 minutes
Prep toppings. Slice olives, dice avocado, slice red onion, chop parsley.
Once polenta is done cooking turn off heat and remove bay leaf. Mash, blend or puree until smooth.
Serve polenta topped with chorizo and fresh veggies!
