Creamy Garlic Polenta w/ Chorizo

Ingredients
  

Creamy Garlic Polenta

  • 1 package Polenta
  • 2 cloves Garlic minced
  • 1 cube Not Chk'n Bouillon
  • 1 Bay Leaf
  • 2 cups Water
  • 1 tbsp Plant-Based Butter

Toppings

  • 1 package Plant-Based Chorizo or Spicy Sausage
  • ½ cup Green Olives sliced
  • 1 Avocado diced
  • ½ Red Onion thinly sliced
  • 1 cup Parsley chopped

Instructions
 

  • Use a cheese grater to grate polenta. Add to a medium sauce pan along with garlic, bay leaf, bouillon, water, and plant-based butter. Bring to a boil. Then, reduce heat and simmer for 10 minutes, stirring regularly,
  • Meanwhile, cook chorizo according to package directions. ~5 minutes
  • Prep toppings. Slice olives, dice avocado, slice red onion, chop parsley.
  • Once polenta is done cooking turn off heat and remove bay leaf. Mash, blend or puree until smooth.
  • Serve polenta topped with chorizo and fresh veggies!
