
Creamy Garlic Polenta w/ Chorizo
Ingredients
Creamy Garlic Polenta
- 1 package Polenta
- 2 cloves Garlic minced
- 1 cube Not Chk'n Bouillon
- 1 Bay Leaf
- 2 cups Water
- 1 tbsp Plant-Based Butter
Toppings
- 1 package Plant-Based Chorizo or Spicy Sausage
- ½ cup Green Olives sliced
- 1 Avocado diced
- ½ Red Onion thinly sliced
- 1 cup Parsley chopped
Instructions
- Use a cheese grater to grate polenta. Add to a medium sauce pan along with garlic, bay leaf, bouillon, water, and plant-based butter. Bring to a boil. Then, reduce heat and simmer for 10 minutes, stirring regularly,
- Meanwhile, cook chorizo according to package directions. ~5 minutes
- Prep toppings. Slice olives, dice avocado, slice red onion, chop parsley.
- Once polenta is done cooking turn off heat and remove bay leaf. Mash, blend or puree until smooth.
- Serve polenta topped with chorizo and fresh veggies!
